Can I choose to use different attributes for my prices, stock levels, and other data?

Yes, when you use a channel connected through the Channel Manager, you can configure almost any synchronization to your needs.

For example, you can use a separate attribute for your stocks, but also for your prices or delivery times. You set this when configuring your channel.
